    • 1 sheet frozen puff pastry, thawed
    • 1 medium apple (such as Honeycrisp), thinly sliced
    • 1 cup sharp cheddar cheese, shredded
    • 1 tablespoon honey
    • 1 egg, beaten (for egg wash)
    • Fresh thyme leaves (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface and cut into 12 equal rectangles.
  3. Place the pastry rectangles on the prepared baking sheet. Use a knife to lightly score a smaller rectangle inside each piece, being careful not to cut all the way through.
  4. Sprinkle shredded cheddar cheese in the center of each rectangle, staying within the scored border.
  5. Top each with 2–3 slices of apple.
  6. Brush the pastry edges with the beaten egg for a golden finish.
  7. Bake for 15–18 minutes or until the pastry is puffed and golden brown.
