Tuscan Creamy “Marry Me” Salmon is a skillet-style dish featuring golden-seared salmon fillets in a rich garlic-Parmesan cream sauce with cherry tomatoes, sun-dried tomatoes, spinach, and Italian herbs.   • 4 salmon fillets, skin removed

  • Salt and black pepper, to taste

  • 1 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 cup cherry tomatoes, halved

  • 1½ cups baby spinach

  • ½ cup sun-dried tomatoes (in oil), drained and chopped

  • 1 cup heavy cream (or use a dairy-free alternative)

  • ½ cup chicken broth

  • ⅓ cup grated Parmesan cheese

  • 1 tsp dried oregano

  • 1 tsp chili flakes (optional, for a bit of heat)

  • Fresh basil or parsley, chopped (for garnish)

Instructions

  • Season both sides of the salmon fillets with salt and pepper.

  • Heat olive oil in a large skillet over medium heat. Sear the salmon fillets for 3–4 minutes per side, or until golden and just cooked through. Remove from the pan and set aside.

  • In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.

  • Add the cherry tomatoes and cook for 2–3 minutes until they begin to soften.

  • Stir in the sun-dried tomatoes and spinach. Cook for another 2–3 minutes until the spinach wilts.

  • Pour in the chicken broth and heavy cream. Stir well to combine.

  • Add grated Parmesan cheese, oregano, and chili flakes if using. Let the sauce simmer for 3–4 minutes, stirring occasionally, until it thickens slightly.

  • Return the salmon fillets to the skillet, spooning sauce over the top. Simmer for 2–3 more minutes until everything is heated through.

  • Garnish with fresh basil or parsley before serving.

  • Use fresh salmon for the best flavor and texture.

  • Let the sauce reduce to your desired consistency before adding salmon back in.

  • Omit chili flakes if sensitive to spice, or double them for extra heat.
