Ingredients
- 1 pound ground beef or ground chicken
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies (like Rotel), undrained
- 1 (1 oz) packet taco seasoning
- 1 ½ cups cooked white rice (or brown rice)
- 1 ½ cups shredded cheddar cheese (or Mexican blend), divided
- ½ cup sour cream
- Optional: 2–3 strips turkey bacon, cooked and crumbled
- Salt and pepper to taste
- Optional toppings: chopped cilantro, sliced green onions, diced avocado, jalapeños
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground beef or chicken with the chopped onion and garlic until meat is browned and cooked through. Drain any excess fat.
- Stir in taco seasoning, black beans, corn, and diced tomatoes (with juices). Simmer for 3–5 minutes to combine flavors.
- Remove from heat and stir in cooked rice, 1 cup of the shredded cheese, and sour cream.
- If using turkey bacon, stir it into the mixture.
- Taste and adjust seasoning with salt and pepper as needed.
- Transfer the mixture into a greased 9×13-inch baking dish.
- Sprinkle the remaining ½ cup cheese evenly over the top.
- Bake uncovered for 20–25 minutes, or until the cheese is melted and the casserole is hot and bubbly.
- Let cool for 5 minutes before serving. Add optional toppings if desired.
