  • 1 ½ pounds baby potatoes
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ¾ pound beef steak (such as sirloin), diced small
  • ½ teaspoon smoked paprika
  • 1 teaspoon Worcestershire sauce
  • ½ cup shredded cheddar cheese
  • 2 tablespoons sour cream
  • 1 tablespoon chopped chives, for garnish

Instructions

    • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
    • Cut potatoes in half and toss them in olive oil, salt, and pepper. Place them cut side down on the baking sheet and roast for 20–25 minutes until tender.
    • Remove from oven and let cool slightly. Using a melon baller or small spoon, carefully scoop out a small portion of the center of each potato half to create a cavity.
    • In a skillet over medium heat, melt butter and sauté onion until soft, about 3 minutes. Add garlic and cook for 30 seconds.
    • Add diced beef steak, paprika, Worcestershire sauce, salt, and pepper. Cook until steak is browned and just cooked through. Remove from heat.
    • Fill each potato bite with the steak mixture and top with shredded cheddar cheese.
    • Return the filled potatoes to the oven and bake for another 5–7 minutes, or until the cheese is melted and bubbly.
