With an optional creamy breakfast sauce and plenty of room for customization, it’s the ultimate homemade version of a fast-food favorite—hearty, flavorful, and perfect for breakfast or brunch.
For the steak filling:
¾ lb shaved beef steak or thinly sliced ribeye
1 tablespoon olive oil
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper, to taste
For the eggs:
4 large eggs
2 tablespoons milk or cream
1 tablespoon butter
Salt and pepper, to taste
Other components:
4 plain bagels, sliced and toasted
4 slices American cheese or cheddar cheese
½ small onion, thinly sliced
1 tablespoon butter (for sautéing onions)
Optional: homemade breakfast sauce (see below)
Optional Breakfast Sauce:
¼ cup mayonnaise
1 teaspoon yellow mustard
1 teaspoon Dijon mustard
1 teaspoon lemon juice
¼ teaspoon paprika
¼ teaspoon garlic powder
Mix all ingredients until smooth and refrigerate until ready to use
In a skillet over medium-high heat, warm the olive oil. Add the shaved steak and season with garlic powder, onion powder, salt, and pepper. Cook for 3 to 4 minutes, stirring occasionally, until browned and just cooked through. Set aside.
In the same pan, melt butter and sauté the sliced onions until soft and lightly caramelized. Set aside.
In a bowl, whisk together the eggs, milk or cream, salt, and pepper. In a nonstick skillet over medium heat, melt butter and scramble the eggs until just set but still fluffy.
Toast the bagels to your preferred level of crispness. If using, spread a small amount of the prepared breakfast sauce on each cut side of the bagels.
To assemble, layer the steak, scrambled eggs, sautéed onions, and a slice of cheese onto the bottom half of each bagel. Top with the remaining half and serve warm.
Use fresh bagels for the best texture and bite.
Caramelize onions fully for maximum sweetness.
Don’t overfill—a balanced stack keeps the sandwich tidy and flavorful.
Make the sauce ahead to save time in the morning.
Substitute steak with mushrooms or tofu for a vegetarian twist.
