    1 cup buttermilk

    8 cooked beef breakfast sausages (or beef sausage links), fully cooked and warm

Instructions

  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix buttermilk, egg, and melted butter until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be slightly thick. Don’t overmix.
  • Insert a skewer or popsicle stick into each cooked beef sausage.
  • Heat a nonstick skillet or griddle over medium heat and lightly grease with butter.
  • Dip each sausage into the pancake batter, turning to coat evenly. Let excess drip off.
  • Place on the hot skillet and cook 2–3 minutes per side or until golden brown and cooked through. Flip carefully.
