For the filling:
- 1 (15 oz) can pumpkin purée
- ¾ cup granulated sugar
- ½ cup brown sugar
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- ½ teaspoon salt
- 3 large eggs
- 1 (12 oz) can evaporated milk
For the topping (optional):
- Whipped cream or vanilla yogurt
- A sprinkle of ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- Line a 9×13-inch baking pan with parchment paper or lightly grease it.
- In a medium bowl, mix the flour and powdered sugar, then stir in melted butter until a dough forms.
- Press the dough evenly into the bottom of the prepared baking pan to form the crust.
- Bake the crust for 15 minutes, then remove from the oven.
- In a large bowl, whisk together the pumpkin purée, granulated sugar, brown sugar, cinnamon, ginger, cloves, and salt.
- Add eggs one at a time, whisking well after each addition.
- Stir in the evaporated milk until fully combined.
- Pour the pumpkin mixture over the pre-baked crust and spread evenly.
- Return the pan to the oven and bake for 45-50 minutes, or until the filling is set and a toothpick inserted in the center comes out mostly clean.
- Allow the bars to cool completely in the pan.
- Chill in the refrigerator for at least 2 hours before slicing into bars.
- Serve with whipped cream or vanilla yogurt and a sprinkle of cinnamon if desired.
