8 corn tostada shells (store-bought or homemade)
2 cups cooked, shredded chicken (rotisserie or leftover works great)
½ cup BBQ sauce (your favorite brand or homemade)
1 ½ cups shredded cheese (cheddar, Monterey Jack, or a blend)
½ cup black beans (optional, rinsed and drained)
1 tablespoon olive oil (if making tostadas from corn tortillas)
Shredded lettuce
Diced tomatoes
Pickled red onions
Sliced jalapeños
Avocado or guacamole
Sour cream or ranch drizzle
Fresh cilantro
Lime wedges
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
Brush corn tortillas lightly with olive oil and place them on the baking sheet.
Bake for 5–7 minutes per side, flipping once, until golden and crisp.
In a bowl, toss shredded chicken with BBQ sauce until evenly coated.
Warm slightly in a skillet or microwave if needed.
Spread a spoonful of black beans (optional) on each tostada shell.
Top with a generous amount of BBQ chicken and sprinkle with shredded cheese.
Return assembled tostadas to the oven and bake for 5–7 minutes, or until cheese is melted and everything is heated through.
Top with your favorite toppings: lettuce, tomatoes, avocado, sour cream, etc.
Serve immediately with lime wedges for a fresh finish.
Shortcut Tip: Use pre-made tostada shells and rotisserie chicken to save time.
Tostada Swap: Use flour tortillas, naan, or pita rounds if you don’t have corn tortillas.
Make It Spicy: Use spicy BBQ sauce or top with jalapeños and a drizzle of hot sauce.
Make It Vegetarian: Swap chicken for BBQ jackfruit or seasoned black beans.
Storage: Store all components separately. Assembled tostadas are best enjoyed fresh so they don’t get soggy.
