Instructions

  • Preheat the oven to 350 °F (175 °C).
  • In a large skillet over medium heat, melt the butter until foaming. Add the sliced onions, season with a pinch of salt, and cook, stirring occasionally, until they are deeply golden and caramelized, about 20 minutes.
  • Add the chopped turkey bacon and chicken ham to the onions. Cook for 3–4 minutes until they begin to brown. Stir in the minced garlic and thyme, cooking until fragrant, about 1 minute. Season to taste with salt and pepper.
  • In a large bowl, combine the cooked rice and shredded chicken. Pour in the chicken broth and half of the Gruyère and Parmesan cheeses; stir until everything is evenly moistened.
  • Add the caramelized onion–meat mixture to the rice mixture and stir to combine. Transfer to a lightly greased 9×13-inch baking dish, smoothing the top.
  • Sprinkle the remaining Gruyère and Parmesan over the casserole. Bake until the cheese is melted and bubbly and the casserole is heated through, about 20–25 minutes.
  • Remove from the oven and let rest for 5 minutes. Garnish with chopped parsley before serving.
